
Smoked Stuffed Meatballs
When I think about meatballs, I typically think about spaghetti and meatballs or the occasional meatball sub. However, these smoked and stuffed meatballs are a perfect gameday or party appetizer. Here’s an easy recipe if you’re tailgating during football season or hosting a party at home!
Ingredients
- 1 lb of 80/20 ground beef
- 1 lb of chorizo sausage
- 4 eggs
- 1 cup of bread crumbs
- ½ cup of Parmesan cheese
- 2 tsp of pepper
- 1 TBSP of salt
- 6 oz of mozzarella cheese, cubed
- Your favorite sweet BBQ rub
- Your favorite sweet BBQ sauce

Here’s an easy recipe if you’re tailgating during football season or hosting a party at home!
Instructions:
Preheat your smoker to 225°F.
Mix the ground beef and chorizo in the mixing bowl.
Add the eggs, bread crumbs, parmesan cheese, pepper, and salt. Mix by hand until fully incorporated.
Form into balls, roughly 1-1.5 oz in size. Create an indentation and fill with a cube of mozzarella cheese, then seal the meatball back up.
Sprinkle the finished meatballs with your favorite sweet barbecue rub.
Place on the preheated smoker and smoke until 160°F internal temperature.
Serve alongside your favorite sweet barbecue sauce and enjoy!
Substitutions:
You can sub out the chorizo for additional ground beef or ground pork if you don’t like chorizo
You can sub out mozzarella cheese for pepper jack for a bigger kick
You can also glaze the meatballs for the final 10 minutes they are on the smoker
